Jam Goddess Summerfruit crumb squares

Ingredients - The Jam Goddess 

Makes around 10


1 cup spelt flour

1,5 cup oats

1/3 cup coconut sugar

1/2 cup coconut oil, softened but not melted

1 tsp baking soda

Pinch of salt

Jam Goddess Summerfruit & Chia 



Preheat oven to 180 degrees and line it up small baking dish with baking paper.

In a large mixing bowl, mix together flour, oats, baking soda and salt. Add in coconut sugar, coconut oil and using your hands work into mixture until evenly moistened.

Place 2/3 of the oat mixture to the prepared baking dish and press down into an even layer. Spread summerfruit jam on top and sprinkle evenly with remaining oat mixture, while slightly pressing into jam layer.

Bake in preheated oven until golden brown, about 40 minutes. Remove from oven and allow to cool completely before cutting into squares. Store in an airtight container.
